Gently remove the tentacles, set them aside,\u00a0and use a knife to remove the eye.<br \/>\nRemove the transparent cartilage from inside the body.<br \/>\nEmpty the sack from the remaining viscera and wash it thoroughly under water.<br \/>\nCut the squid and peel the skin.<\/p>\n<p>Use a spoon to fill the squids with the filling by following the directions below, and close them\u00a0with a toothpick.<\/p>\n<p>Pour a little oil and a clove of garlic in a pan and saut\u00e9 the squids.<br \/>\nPour the white wine and cook slowly with the lid closed for 15-20 minutes.<\/p>\n<p>Season with raw EVO oil.<\/p>\n<h3><strong>SQUID STUFFING\u00a0<\/strong><\/h3>\n<p>Slice the tentacles of the squid into small pieces.<br \/>\nPour a drizzle of oil and a clove of garlic into a pan and saut\u00e9 the tentacles with salt and pepper\u00a0until they are soft.<br \/>\nTransfer the mixture into a bowl.<br \/>\nNow put the breadcrumbs in the same pan and toast it for about 2-3 minutes; stir often so that it\u00a0does not stick and\/or burn.<br \/>\nMove everything to a bowl and add the parsley, capers, olives, a little lemon zest and a drizzle of\u00a0EVO oil. The dough will be sandy and compact.<\/p>\n<\/div>\n<\/section>\n<div class=\"hr hr-custom hr-center hr-icon-no avia-builder-el-18 el_after_av_textblock el_before_av_heading \"><\/div>\n<div class=\"av-special-heading av-special-heading-h2 custom-color-heading blockquote modern-quote avia-builder-el-19 el_after_av_hr el_before_av_heading \">\n<h2 class=\"av-special-heading-tag \">ORANGE MARMALADE, ACCOMPANIMENT FOR SQUIDS<\/h2>\n<\/div>\n<div class=\"av-special-heading av-special-heading-h3 custom-color-heading blockquote modern-quote avia-builder-el-20 el_after_av_heading el_before_av_textblock \">\n<h3 class=\"av-special-heading-tag \">Ingredients:<\/h3>\n<\/div>\n<section class=\"av_textblock_section \">\n<div class=\"avia_textblock \">\n<p>\u2022 3 Organic oranges<\/p>\n<p>\u2022 1 Organic apple<\/p>\n<\/div>\n<\/section>\n<div class=\"av-special-heading av-special-heading-h3 custom-color-heading blockquote modern-quote avia-builder-el-22 el_after_av_textblock el_before_av_textblock \">\n<h3 class=\"av-special-heading-tag \">Preparation:<\/h3>\n<\/div>\n<section class=\"av_textblock_section \">\n<div class=\"avia_textblock \">\n<p>It is important that the fruits are organic since the rind will be used. If organic fruit is unavailable,\u00a0don\u2019t use the orange rind and peel the apple.<br \/>\nPeel the oranges by removing the zest, the white membrane and the cuticles, divide them into\u00a0wedges and cut them into pieces.<br \/>\nSlice the rind into strips and set aside<br \/>\nCut the apples into small pieces and blend them with an immersion blender until a smooth puree\u00a0is obtained.<br \/>\nPut the oranges, the zest and the apple pur\u00e9e on the stove and bring to boil.<br \/>\nCook over low heat for about an hour until the jam is thick.<\/p>\n<\/div>\n<\/section>\n<div class=\"hr hr-custom hr-center hr-icon-no avia-builder-el-24 el_after_av_textblock el_before_av_heading \"><\/div>\n<div class=\"av-special-heading av-special-heading-h2 custom-color-heading blockquote modern-quote avia-builder-el-25 el_after_av_hr el_before_av_heading \">\n<h2 class=\"av-special-heading-tag \">MASHED CAULIFLOWER<\/h2>\n<\/div>\n<div class=\"av-special-heading av-special-heading-h3 custom-color-heading blockquote modern-quote avia-builder-el-26 el_after_av_heading el_before_av_textblock \">\n<h3 class=\"av-special-heading-tag \">Ingredients:<\/h3>\n<\/div>\n<section class=\"av_textblock_section \">\n<div class=\"avia_textblock \">\n<p>\u2022 2 Large cauliflowers<\/p>\n<p>\u2022 50 ml of EVO oil<\/p>\n<p>\u2022 100 ml of soy milk without added sugar<\/p>\n<p>\u2022 Salt to taste<\/p>\n<p>\u2022 40 g of Parmesan cheese<\/p>\n<p>\u2022 Grated nutmeg to taste<\/p>\n<\/div>\n<\/section>\n<div class=\"av-special-heading av-special-heading-h3 custom-color-heading blockquote modern-quote avia-builder-el-28 el_after_av_textblock el_before_av_textblock \">\n<h3 class=\"av-special-heading-tag \">Preparation:<\/h3>\n<\/div>\n<section class=\"av_textblock_section \">\n<div class=\"avia_textblock \">\n<p>After dividing the cauliflower into florets, steam it until the consistency is \u201cal dente.\u201d<br \/>\nCombine all the ingredients in a kitchen mixer and whisk everything until the mixture is creamy\u00a0and free of lumps.<br \/>\nPut the preparation in a non-stick pan and let it heat over a low flame, stirring often to prevent it\u00a0from sticking.<\/p>\n<\/div>\n<\/section>\n<div class=\"hr hr-custom hr-center hr-icon-no avia-builder-el-30 el_after_av_textblock el_before_av_heading \"><\/div>\n<div class=\"av-special-heading av-special-heading-h2 custom-color-heading blockquote modern-quote avia-builder-el-31 el_after_av_hr el_before_av_heading \">\n<h2 class=\"av-special-heading-tag \">VEGAN PUMPKIN PIE WITH COCOA<\/h2>\n<\/div>\n<div class=\"av-special-heading av-special-heading-h3 custom-color-heading blockquote modern-quote avia-builder-el-32 el_after_av_heading el_before_av_textblock \">\n<h3 class=\"av-special-heading-tag \">Ingredients:<\/h3>\n<\/div>\n<section class=\"av_textblock_section \">\n<div class=\"avia_textblock \">\n<p>\u2022 120 g of whole wheat flour<\/p>\n<p>\u2022 130 g of emmer flour (or other cereal to taste)<\/p>\n<p>\u2022 190 g of raw cane sugar (130 g for the pastry and 60 g for the filling)<\/p>\n<p>\u2022 60 g of EVO oil<\/p>\n<p>\u2022 70 ml of water<\/p>\n<p>\u2022 Half a packet of yeast<\/p>\n<p>\u2022 15 g of bitter cocoa<\/p>\n<p>\u2022 350 g of pumpkin<\/p>\n<p>\u2022 150 g of coconut milk (or other vegetable drink without added sugar)<\/p>\n<p>\u2022 55 g of cornstarch<\/p>\n<p>\u2022 Cinnamon, nutmeg, and cloves to taste<\/p>\n<p>\u2022 A pinch of salt<\/p>\n<\/div>\n<\/section>\n<div class=\"av-special-heading av-special-heading-h3 custom-color-heading blockquote modern-quote avia-builder-el-34 el_after_av_textblock el_before_av_textblock \">\n<h3 class=\"av-special-heading-tag \">Preparation:<\/h3>\n<\/div>\n<section class=\"av_textblock_section \">\n<div class=\"avia_textblock \">\n<h3><strong>VEGAN SHORTBREAD WITH COCOA<\/strong><\/h3>\n<p>Put 130 g of raw sugar, water, oil, flour, cocoa and a pinch of salt in a bowl.<br \/>\nMix all the ingredients until you get a smooth dough.<br \/>\nNow wrap the dough with plastic wrapper and place it in the refrigerator for about 1 hour.<\/p>\n<h3><strong>PUMPLIN FILLING\u00a0<\/strong><\/h3>\n<p>Peel the pumpkin and cut it into pieces and let it boil for about 20 minutes.<br \/>\nOnce cooked, pass it with an immersion blender until a homogeneous puree is obtained.<br \/>\nTransfer the pumpkin into a bowl and add the vegetable drink, corn starch, spices, 60 g of raw\u00a0sugar and a pinch of salt.<br \/>\nWhisk until mixture is homogeneous and free of lumps.<\/p>\n<p>Now remove the vegan pastry from the refrigerator and roll it with a rolling pin on a floured\u00a0surface until it reaches a thickness of half a centimeter.<br \/>\nVegan shortbread may be less elastic than traditional shortbread, which is why it is recommended\u00a0to wet the dough slightly if it is difficult to work or if it\u2019s too crumbly.<br \/>\nPut some oil in the mold and spread it with absorbent paper; \u201cFlour\u201d with cocoa powder, removing\u00a0excess as you would with flour, and place the pastry inside.<br \/>\nPlace the pastry in the fridge for about ten minutes.<br \/>\nPrick the base of the mold with a fork, cover the base with parchment paper and place a weight on\u00a0top (i.e. beans). Preheat oven to 392\u00b0 F and bake for 10 minutes.<br \/>\nOnce this precooking is complete, remove the weight and the parchment paper, and stuff the\u00a0pastry with the pumpkin-based mixture.
